Brussels Sprouts and Sweet Potatoes with Maple Syrup

Brussel sprouts with sweet potatoes and maple syrup is now one of my family’s all-time-favourites for holiday meals. We have it for Thanksgiving, Christmas and sometimes Easter too. Try it and let me know what you think.

Ingredients for Brussels sprouts and Sweet Potato Dish...(and yes, there is bacon)...

Makes 8 Servings:

  • 4 Strips Bacon (or a whole package if you like) – broken into 1/2″ pieces
  • 1 Onion finely chopped
  • 2 pounds Brussel sprouts, thinly sliced (discard tough outer leaves)
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 cup coarsely chopped toasted Pecans – optional
  • 3 medium Sweet Potatoes (2 pounds) peeled and sliced into thin rounds
  • 1/3 cup Maple Syrup 
  • 3 Tbsp unsalted Butter,melted
  • Minced Italian Parsley for garnish – optional

Steps One and Two...Sweet Potatoes...and Bacon...

  1. Preheat oven to 400°.
  2. Pre-bake potatoes a little if desired (makes them easier to peel).
  3. Lightly butter a 2 quart baking dish.
  4. In a skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon or spatula and drain on paper towels.

Steps Three and Four...Brussel Sprouts,etc...

  1. Reduce heat to low on skillet that cooked bacon, and add onion. Cook until translucent(about 5 minutes).
  2. Add Brussels sprouts and cook until soft(about 5 minutes), stirring frequently.
  3. Transfer to a bowl, the onions, Brussels sprouts and bacon.

Steps Five and Six..Sweet Potatoes and Maple Syrup...

  1. Peel potatoes, slice into rounds and cook in butter in skillet until light brown (about 3 minutes per side).
  2. Meanwhile, in a small bowl, whisk together maple syrup and melted butter.
  3. Toss all ingredients together in a soufflé dish or bake pan and bake for twenty minutes.
