Favourite Recipes – Slowcooker Lasagna

At this time of year thoughts turn to comfort food. Almost anything cooked in a slow cooker qualifies, but one of my favourites is lasagna. It is also a hit to any potluck and it is so easy to make. I like to make my own marinara type sauce but you could use your own favorite pasta sauce.

List of ingredients for slow cooker lasagna...

For this recipe I used ground chicken, but any ground meat would do.(approx. 1-2lbs.) You will also need:

  • Oven ready lasagna noodles
  • Ricotta cheese
  • Mozzarella or cheddar cheese -2 cups grated (leave some for topper)
  • Parmesan cheese 
  • 1 egg
  • Spinach – 1 cup or approx. 6 cubes frozen.
  • Crushed tomatoes – 1 can
  • Tomato paste -1 can
  • Onion 1 large or 2 small
  • Garlic 3 cloves
  • Olive oil
  • Basil
  • Oregano
  • Black Pepper

For meat sauce...

In a large skillet cook ground meat, chopped onion and crushed garlic cloves with a little olive oil and pepper.

Add the spinach and when it is cooked, combine the crushed tomatoes and tomato paste. If you like you can also add other spices like dried parsley flakes or red pepper flakes.

For cheesy layers...

In a bowl combine the ricotta cheese, mozzarella, parmesan and egg. The basil and oregano go in next. Leave some of the grated cheese to top the final layer.

Making the lasagna layers...

Put a layer of meat sauce on the bottom of the crockpot and then top with a layer of noodles.

The next layer is the ricotta cheese mixture. Repeat  – meat – noodles – cheese.

For the top layer do another layer of meat sauce on noodles . Top with some grated cheese.

Cook on high for 4 hours or 8 hours on low. Not all slow cookers are the same. The size of the pot and how many layers you use many alter the cooking time required so check periodically.
