Favorite Recipes – Eggplant Parmigiana

Eggplant parmigiana is one of my favorite dishes. If you like lasagna there’s a good chance you will like this too. It’s similar to lasagna without the pasta and a little twist with the unique flavor of eggplant. I hope you will enjoy it too.

Eggplant Parmigiana Ingredients...

I like to make a double batch with two eggplants, but if you just want to make a single batch, one large one will do. Sometimes, when doing a double batch, I will do one can diced tomatoes and one can crushed tomatoes.

To make the sauce you will need:

  • 1 lb. Ground Beef or meat of your choice.
  • 1 can Diced Tomatoes.
  • 1 can Tomato Paste.
  • 1/2 cup Onion -finely chopped.
  • 1 Clove Garlic.
  • 2 Tsp. Dried Oregano.
  • 1 Tsp. Dried Basil.
  • 1 1/2 Tsp. Salt.
  • 1 Tsp. Pepper.
  • 1 Tbsp. Brown Sugar or Coconut Sugar.

For the eggplant coating and final assembly:

  • 2 Eggs, slightly beaten.
  • 1/2 cup Italian Bread Crumbs (*optional)
  • 1 1/4 cup Grated Parmesan Cheese.
  • 1 pkg. (8 oz.) Mozzarella Cheese (or Cheddar).

Making the sauce...

First cook the ground meat thoroughly in a little olive oil. Add the diced onions and sauté until translucent. Mix in can of diced tomatoes, the tomato paste and all the spices. Let simmer while preparing the eggplant.

Eggplant Preparation...

Wash eggplant and cut into slices approximately 1/2″ thick. In a shallow bowl or dish, lightly beat eggs with 1 tablespoon water.

Dip eggplant slices in eggs and then in grated Parmesan cheese (and bread crumbs, if desired). Sauté the eggplant slices in a skillet with 1 -2 tablespoons olive oil. Add oil as needed.

Putting it all together..

In a baking dish, lay out a single layer of the cooked eggplant slices. Put slices of mozzarella, cheddar or other cheese on top.

Add half the meat sauce and another layer of eggplant slices. Put more cheese slices on the eggplant and another layer of the sauce. Top with Parmesan cheese and grated mozzarella, cheddar or other cheese.

Bake uncovered in preheated oven at 350° for 25 minutes until cheese melts and top is slightly browned. Serve with garlic bread and salad of your choice.
